My Sort of Green Breakfast Smoothie Recipe

Yesterday, I wrote that I’ve been making smoothies for breakfast recently, and Heidi asked if I would share the recipe, which I’m happy to do.

I should mention that I make smoothies in my food processor, for two reasons:

1) I need the capacity, because I usually make enough for my husband and kids too (the kids haven’t warmed up to the idea of a green drink yet, but I keep trying) and,

2) My blender stinks. I’ve needed a new one for years, but I’ve never made it a priority.

The food processor actually seems to make a smoother smoothie. I think the large, sharp blade does a better job of pulverizing the frozen fruits and veggies.

Here’s what you’ll need:

1 cup low, or nonfat milk. I use 1%.
1 cup yogurt. I use Chobani, either vanilla or plain. It makes a very rich, thick smoothie.
1 (9-ounce) package frozen, chopped spinach, thawed
1 frozen banana, cut into small pieces. Whenever we have an overripe banana that nobody wants to eat, I peel it, cut it in half, and add to a container in my freezer.
1 cup frozen strawberries (raspberries or blueberries are also good)
2 teaspoons honey

NOTE: This recipe makes 3 large servings – enough for 2 adults and 2 small children. If you’re just making some for yourself, you’ll want to cut it in half. Also, you should defrost your spinach in the fridge the night before – it blends up better that way.

First, put the fruits and spinach in the food processor or blender.

Add the rest of the ingredients,

And blend it up until smooth.

This makes the thickest, creamiest smoothie I’ve ever had, and it’s very filling. It’s also an easy way to get a couple of fruit/veggie servings in, plus calcium and protein (Chobani has twice the protein of regular yogurt).

If the idea of spinach in a smoothie is off-putting to you, let me reassure you that you don’t really taste it at all. Spinach is a very mild, tender green, which pairs well with fruits and sweet dressings, so it’s a natural in fruit smoothies. It just adds a tiny bit of texture, while packing a big nutritional punch.

See….my husband couldn’t be happier about it!

    Thank you for posting this.  I have been wanting to try one since a friend recommended them.  This, in addition to the gluten-free diet we are starting for our son, might actually make me break down and buy a food processor (long-overdue purchase).  Do you like your Black and Decker?

      I do like it Shelly – it works great, and was inexpensive. My only complaint is that it’s so LOUD. I actually have to cover my ears when it’s running.

    Somewhere I read that mixing the dairy and fruits/veggies did not allow for optimal digestion…whatever.  I make mine with a few handfuls of fresh spinach, about a cup of frozen fruit, a banana, a bit of water, and a spoon of honey.  SO GOOD!  I love plain yogurt, so I save that for a snack.  I make mine (for just me) in a mason jar attached to my blender.  Here’s my post on it a while back:

    That’s great.  My kids like a green smoothie that we make with banana and peanut butter but I usually use fresh spinach if I can find it on sale or on the cheap.

    I love green smoothies, but haven’t had one in a while! I will have to make one now- thanks!  Random tip: you can put it in a mason jar w/ lid (recycled PB jar, etc) if you have to take it on the go.  Use a straw to keep the dribble down.

    Hi! I love green smoothies, and just wanted to share a tip I learned from “Passionate Homemaking” blog. Lindsey suggests blending up the spinach first with the liquids, to help the spinach blend a little more smoothly…usually with  mine (unless I add too much spinach!:oP), it has very little green specks once I am done. Then add the remainder.  Of course, I have not yet used frozen (mainly b/c my hubby hates frozen spinach and wouldn’t drink it), so I am not sure if that makes any difference either. My kiddo loves her “smoooveee”!

       That’s a good idea! I use quite a lot of spinach too – most recipes I see call for less – but I haven’t noticed a difference in texture when I use fresh versus frozen. I started using frozen because it’s easy to keep on hand and doesn’t spoil. But I’ll try blending it first with the milk, and see what happens.

    I’ve been doing something very similar, but I use fresh spinach and no honey. I make enough for two and stick one, covered, in the fridge or freezer for the next day.

    It sounds like the food processor is working well for you for various reasons, but for anyone interested in doing single portions, I can’t recommend an immersion blender highly enough. Mine is a Kitchen Aid, and it is The Bomb.

    I LOVE LOVE LOVE green smoothies!  At my house we call them Green Monsters and we drink them daily!  Whenever I feel tired, like I’m getting sick, or I ate a terrible meal (we had chinese food last night) I drink one of these as a meal replacement.  My recipe is a bit different – but the same idea.  My oster blender works great for one -2 servings- I’ll try my food processor sometime for larger batches!  Great idea!

    if its just the color that puts off the kids, then maybe this trick will work! i call my kale or spinach smoothies “grinch smoothies” because of the green.  i have a grinch loving little girl and that gets her interested in tasting it.  one taste and she will usually drink the whole glass. :)

    Yum! I love berry smoothies with spinach.  If you use more berries or a berry mix then you don’t even have the green color, more of a pink.  Flax seed goes really well too, and since you are using a food processor, that will give you lots of good Omega 3s too.   My son lives for when I’m making smoothies, they feel like dessert for breakfast but with so much of a nutritional punch!

    It seems everyone must be having these ~ I’ve seen so many people talking about them.  I still don’t know about the spinach ~ I know I should try it, but there’s something about having spinach in a drink….

    Glad I’m not the only one that uses a food processor for my smoothies.  My blender broke years ago and just never replaced it.  Thanks for letting me know that I can use frozen spinach.
