Cranberry Cake with Butter Sauce

By request, this is the recipe for cranberry cake with butter sauce, which is a holiday tradition in our family, and my husband’s favorite Christmas dessert.

INGREDIENTS
2 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
3 tablespoons butter, softened
1 cup granulated sugar
2 eggs, beaten
1 cup milk
2 cups fresh cranberries (don’t substitute dried cranberries. I’ve tried this, and even if you attempt to rehydrate them, it’s just not the same).

Sauce:
1/2 cup butter (one stick)
1 1/3 cups sugar
2/3 cup evaporated milk
2 teaspoons vanilla extract
pinch of salt, to taste

DIRECTIONS
1. Preheat oven to 350. Grease a 13-by-9-inch baking pan.
2. To make the cake, sift together flour, baking powder and salt in a small bowl. Combine butter and sugar in a large bowl. Beat with a mixer on medium speed until well blended. Add eggs. Add milk alternately with the dry ingredients, starting and ending with dry ingredients. Mix well. Stir in cranberries. Bake 30 minutes or until toothpick inserted in the center comes out clean.
3. To make the sauce, combine all ingredients in a saucepan over medium low heat and cook 10 minutes or until sugar is melted, stirring frequently. Allow cake to cool slightly, and cut into individual servings. Spoon warm butter sauce on top just before serving. Serves 12.

My husband’s family loves cranberries so this would be the perfect dessert to serve when it’s our turn to prepare the holiday meal. Thanks so much for sharing this, Heather!
